HŌRAI

A THREE-SISTER
RESTAURANT, STOCKHOLM

Open from Wednesday to Sunday, six o'clock until late. Twenty-six covers, two seatings, one menu a night.

THE
HOUSE

est. mmxxiv

Hōrai is a single dining room on the top floor of a former bookbinder's workshop. The chefs are three sisters, born in Stockholm and raised between two coasts — cooking what each thinks the others meant. The menu changes weekly. There is no à la carte. The wine list is short on purpose; the sake list is not.

Named for the immortal mountain in the eastern sea — a place no one has ever quite been to, only described.

THE
MENUS

Three menus, one of which is served each evening — chosen by what the market gave us at dawn. Pairings on request. Allergies handled in advance, not at the table.

I

SANSAI

山菜 · SEVEN COURSES · VEGETABLE-LED

Mountain vegetables, river fish, koji-aged tofu and the season's first nettle — a quiet menu, mostly green, finishing with a single piece of fruit and a thirty-year hōjicha. Served in the corner by the window.

The full conversation between the three sisters. Opens with the youngest sister's otoshi, finishes with the eldest's burnt-sugar custard. The middle sister cooks the fish. Three hours, eaten slowly, drunk slower.

SANSAI · SECOND COURSE · PICKLED MOUNTAIN VEGETABLES, SOFT TOFU

THE ROOM

The dining room is built from raw ash and oxidised brass, twenty-six covers around a single kitchen pass. Lacquer-red walls, dim and warm, with a single window that looks out over the water and the old town. Every seat faces the kitchen pass.

The room is loud at the start of the evening and quiet by the end. We close the door at half past six.

OPEN MONDAYS
